ワイン樽とアメリカン オークのフ-ダー樽で熟成させた3つの異なるバッチから作られたセゾン。
いずれもハーブ系のホップを使用し、アップライトのオリジナル ミックス発酵が故に、深みのあるアロマが表面に絶妙に出ている。
オークで 7〜19ヶ月間熟成させた後、ポプラの芽を少量加えてブレン ド。松、土、樹脂の味が、発酵時のフルーティネスと対照的に、ホップのフレーバーと調和して、森のテーマを作り出す。

Woodwinds is a saison taken from three different batches aged in wine barrels and our American oak foeder. They all incorporated herbal hop varieties and a typical Upright mixed fermentation, showing complex aromatics that ride the surface of the profile without sticking out. After 7 – 19 months of maturation in oak, the beers were blended with a small addition of poplar buds, creating a forest theme with elements of pine, earth, and resin contrasting the fruitiness of the fermentation notes and threading with the hop flavors. The Woodwinds has been well cellared at the brewery and is in a sweet spot to enjoy between now and next winter.
