For this small batch of Druif, we macerated organic Riesling grapes for over five months on old lambik before we let the grape lambik rest for another full year on an oak barrel. Given the long maceration, the additional year of maturation and the old lambik that we used for maceration and blending, the weighted average of this Druif is more than 34 months on the moment of bottling. The final fruit intensity is more than 541 grams of grapes per litre of finished fruit lambik. All ingredients are organically grown and all cereals originate from Pajottenland. 100% 3 Fonteinen.
