収穫後に3か月ほどセラーで寝かせたリンゴを圧搾し、約4か月間、皮、種、果肉ごと、酵母添加も行わずに醗酵&初期段階の熟成を行う。
圧搾し、液体だけの状態にしたサイダーを更にステンレスタンクで熟成、無濾過、酸化防止剤完全無添加でボトリング。
